20+ Quick & Easy Weeknight Dinners Ideas
Weeknights are the hardest days to get through, especially on Mondays and Tuesdays. Wednesdays tend to get a bit better since it’s the middle of the week, and by Thursday, you can already feel the weekend approaching. Fridays, of course, are the best.
From Monday to Wednesday, I usually feel super tired from work. Not to mention a bit lazy, too. After a full day of meetings, I would rush home so I can cook something quick and that can be a pain at times. I try to strike a balance by preparing comfort food using good ingredients, rather than turning to fast food and all that mumbo-jumbo. No more McDonald’s for me!
One of my favorite weeknight meals is a simple turkey burger with fresh leafy greens or romaine lettuce on my choice of bun. That would be served with a nice side salad topped with my favorite sauce, basil with olive oil, and some crunchy croutons. It’s light but filling at the same time because the meat is packed with protein. And if I don’t feel full enough, I’ll add some avocado spread. Avocado is so good – it’s filling, full of healthy fats, and really satisfies your hunger.
By the time Friday is here, I will have started thinking about the weekend. One of my favorite Friday night meals is a nice juicy steak with my to-die-for homemade fries, wedges, or even mashed potatoes. I usually swap regular potatoes for sweet potatoes because they’re healthier and, in my opinion, taste way better.
